Ingredients

For the dough:

  • 1 cups masa harina

  • 3/4 cup shiitake mushroom broth (or water)

  • 1/2 tsp salt

  • A handful of rice (toasted)

For the filling:

Preparation

  1. Add the masa harina and salt to a medium-sized bowl. Pour in the mushroom broth and mix using a spatula until almost combined. Use your hands to finish forming the dough, then divide into an even number of dough spheres.

  2. Toast the rice on a pan and set aside.

  3. Heat the Mushroom & 3 Cheese Frittatas until just not frozen, then flatten.

  4. Assemble the pupusas by flattening the dough and adding the refried beans, flattened frittatas, and mozzarella cheese, then top with another dough piece. Pinch the edges to seal them completely.

  5. Pan fry the pupusas for 10 minutes on each side or until golden.

  6. Let cool and freeze for up to 3 months or enjoy your fresh pupusas now!
